Black Sesame + Shine WYT Cookies
Deeply toasted black sesame meets creamy Shine WYT in a cookie that walks the line between sweet, nutty, and a tad savory.
Shine WYT chunks are pressed straight into the dough, creating a creamy pocket in every cookie.
Yield: ~12–15 cookies
Ingredients:
284g all-purpose flour
4g baking soda
5g fine sea salt
170g unsalted butter, softened
200g granulated cane sugar
90g brown sugar
80g black sesame paste
1 large egg
1 large egg yolk
5g vanilla extract
4g vanilla bean paste (or seeds from 1 vanilla bean)
One piece of Shine WYT Bake per cookie
Black sesame seeds, for finishing
Flaky sea salt, optional
Method:
1. Mix the dry ingredients.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
2. Cream the butter and sugars.
Beat the softened butter, granulated sugar, and brown sugar for 3–5 minutes, until light and creamy.
3. Add the black sesame.
Beat in the black sesame paste until evenly incorporated. The dough should take on a light charcoal color.
4. Add the egg + aromatics.
Beat in the egg and egg yolk.
Add the vanilla extract, sesame oil, and vanilla bean powder and mix until smooth and fully incorporated.
5. Finish the dough.
Fold the dry ingredients into the wet ingredients just until no streaks of flour remain. Avoid overmixing.
6. Scoop + chill.
Portion the dough into approximately 50–55g balls and place on a parchment-lined tray.
Press a chunk of Shine WYT into the top of each cookie.
Chill in the freezer for at least 1 hour, or preferably overnight.
7. Bake
Preheat the oven to 350°F / 175°C.
Arrange the chilled cookies on a parchment-lined baking sheet, leaving at least 2 inches between them.
Bake for 11–15 minutes, until the edges are set but the centers still appear slightly soft.
7. Cool + enjoy!
Allow them to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
