Shine Mole Blanco
A versatile mole blanco recipe designed for silky texture, balanced spice, and rich flavor in a variety of savory applications.

Shine Mole Blanco
Yield: ~2 quarts of Mole
Enjoy:
with Roasted meat or veggies
alongside tortillas, and cotija cheese
as enmoladas
Ingredients:
150 grams of Shine WYT Bake (1/2 of a package)
½ of a head of Cauliflower, cored and leaves removed
1 small Celery Root, peeled and diced
1 large parsnip, peeled and diced
1 corn tortilla
1 whole onion, peeled, and diced
5 cloves of garlic, peeled
2 T Whole Coriander seed
1 ½ T Whole Cumin seed
¾ T Whole Caraway Seed
2 T Ground White Pepper
¼ C Peanuts
1/3 C Cashew
5 Arbol Chiles
3 T White Miso
Water
Salt to taste
Method:
Prepare the Vegetables
Peel the parsnip, onion, celery root, and garlic. cut into small ½ dollar sized pieces.
Core, and remove leaves of cauliflower and cut into ½ dollar sized pieces.
Set Vegetables aside in a bowl.
Toast the spices and chiles
Using a pot Lightly toast the coriander, cumin, and caraway seeds until fragrant, about 1–2 minutes.
Add the arbol chiles and toast briefly, 15–30 seconds per side, being careful not to burn them.
Transfer everything to a bowl and set aside.
Toast the tortilla and nuts
In the same pot, toast the corn tortilla until gently golden and crisp. Break into pieces.
Toast the peanuts and cashews until lightly golden and aromatic, about 2–3 minutes.
Hydrate and stew
Add the vegetables, toasted spices, chiles, tortilla pieces, nuts, and white pepper.
Add enough water to barely cover the ingredients.
Season with salt to your preference, stir and taste the liquid to ensure appropriate seasoning level.
Cook until vegetables are soft. Add and stir in Miso at this time.
Blend the mole
Transfer contents of pot to a blender and blend until smooth. Add additional water as needed.
Strain blended mole through a fine mesh strainer into the cooking pot.
cook on low heat and stir in your Shine WYT Bake until fully incorporated.
Season and finish
Taste and season with salt as needed.
Adjust consistency with warm water if necessary.
