Shine-Dipped Coconut Macaroons

Chewy, coconut-packed macaroons dipped in melted Shine Bake.

Toasted coconut flakes bind with sweetened condensed milk and airy whipped egg whites for a macaroon that's crisp on the outside, chewy in the middle, and finished with a Shine-dipped base.

Yield: ~18–20 macaroons

Ingredients:

  • 250g Coconut flakes

  • 175g Sweetened condensed milk (we used half plain, half ube-flavored)

  • 3.5g (¾ tsp) Vanilla extract

  • 2 Egg whites

  • 1g (¼ tsp) Salt

  • 75g Shine Bake, melted (we used LYT & WYT)

Note:

  • We like to use both coconut flakes and shredded coconut for more texture!

  • You can use sweetened coconut if you crave a sweeter taste — keep in mind the sweetened condensed milk already adds a perfect amount of sweetness!

  • Try a flavored sweetened condensed milk, like Ube or Pandan, for a fun twist on this classic cookie!

Method:

1. Preheat & Prep

  • Preheat the oven to 325°F (165°C)

  • Set two oven racks near the center of the oven

  • Line two baking sheets with parchment paper

2. Combine the Coconut Mixture

  • In a medium bowl, mix together:

    • Coconut

    • Sweetened condensed milk

    • Vanilla extract

  • Set mixture aside.

3. Whip the Egg Whites

  • In the bowl of an electric mixer, beat the egg whites and salt until stiff peaks form

  • Use a spoon or rubber spatula to fold the egg whites into the coconut mixture

4. Portion & Bake

  • Using a small ice cream scoop or two spoons, form heaping tablespoons of the mixture into mounds on the prepared baking sheets, spacing about 1 inch apart

  • Bake for 23 to 25 minutes, rotating the pans from top to bottom and front to back every 6-8 minutes, until the tops and edges are golden

  • Let cool on the pans for a few minutes, then transfer to a wire rack to cool completely

5. Melt the Shine

  • Melt the Shine in a microwave-safe bowl at medium power, stopping and stirring at 30-second intervals, until just smooth and creamy

(Alternatively, melt the Shine in a double boiler over simmering water.)

6. Dip & Set

  • Dip the bottoms of the macaroons in the Shine, letting any excess drip back into the bowl, and return to the lined baking sheets

  • Place the macaroons in the refrigerator for about 10 minutes to allow the Shine to set

7. Store

  • The cookies keep well in an airtight container at room temperature for about a week.
