Whole Banana Bread

Delectable, chocolate-studded bakery-style banana bread with a crisp banana peel oat streusel.

Ripe banana, pockets of melted Shine Bake, and banana peel streusel adds unexpectedly delicious and impactful experience that has texture, depth, and a new way to experience a classic baked good.

Yield: 1 standard loaf pan or 12 standard muffins

Banana Bread Ingredients:

Dry Ingredients

  • 200g All Purpose Flour

  • 5g (1 tsp) Baking Soda

  • 3g (½ tsp) Baking Powder

  • 3g (½ tsp) Fine Sea Salt

  • 3g (1 tsp) Ground Cinnamon(optional)

Wet Ingredients

  • 200g Very ripe bananas, mashed

  • 120g Brown sugar

  • 2 Large eggs

  • 75g Unsalted butter, melted

  • 45g Plain yogurt or sour cream

  • 5g (1 tsp) Vanilla extract

Chocolate

  • 180g Shine Bake, chopped
    (DRK and LYT are our favorite choice for this recipe)

Banana Peel Streusel Ingredients:

  • 2 Banana peels

  • 60g Rolled oats

  • 60g Brown sugar

  • 50g Cold butter, cubed

  • 40g All-purpose flour

  • 1g Salt

  • 1g Cinnamon(optional)

  • 15g Sesame seeds (optional)

  • 15g Turbinado sugar (optional)

Banana Peel Streusel Method:

1. Prepare the Banana Peels

  • Gather all of your ingredients

  • Wash bananas thoroughly before peeling.

  • Remove any fibrous stem ends.

  • Boil peels in lightly salted water for 5 minutes.

  • Drain and cool slightly.

2. Process the Peels

  • Finely chop the peels or pulse briefly in a food processor until they resemble a coarse paste.

3. Make the Streusel

  • In a mixing bowl combine:

    • oats

    • flour

    • brown sugar

    • salt

    • cinnamon

    • add in optional ingredients at this time

  • Add cold butter and rub together with fingertips until sandy and clumpy.

  • Fold in chopped banana peel.

  • Refrigerate while preparing muffin batter.

Banana Bread Method:

1. Preheat & Prep

  • Preheat oven to 350°F / 175°C

  • Gather all of your ingredients

  • Lightly grease a standard size loaf pan with butter, or a cooking spray of your choice or Line a 12-cup muffin tin

2. Combine Dry Ingredients

In a medium bowl whisk together:

  • High Purpose Flour

  • baking soda

  • baking powder

  • salt

  • cinnamon

Set aside.

3. Combine Wet Ingredients

For best results use room temperature bananas and yogurt

In a large bowl:

  • Mash bananas until mostly smooth

  • Whisk in brown sugar to mashed bananas

  • Add eggs one at a time too the banana mixture

  • Stream in melted butter

  • Mix in yogurt and vanilla extract

4. Fold Batter

  • Add dry ingredients into wet.

  • Fold gently until almost combined.

Do not overmix.

  • Fold in chopped chunks of Shine Bake

The batter should look thick and slightly rustic.

5. Portion + Top

  • Fill a standard sized loaf pan or muffin cups about 85% full

6. Apply Streusel to Top

Once Loaf is full or muffin batter is portioned:

  • Generously scatter streusel over the tops

  • Lightly press some larger chunks into the batter

  • Leave some loose for crispy texture

You want a fully covered with an uneven texture and visible clusters 

Optional:
Add a few extra pieces of Shine Bake on top.

7. Bake—Cool—Indulge

Bake at:

  • 350°F / 175°C for 20–24 minutes

Until:

  • tops are golden

  • streusel is crisp

  • a cake tester comes out mostly clean

Allow muffins to cool:

  • 5 minutes in pan, then move to wire rack

  • Enjoy!

Best served slightly warm and with cultured butter.
